One pan baked chicken with veggies and sweet potatoes
Ingredients:
4 boneless skinless chicken breast or thighs
2 medium sweet potatoes diced
1 zucchini chopped
1 red onion chopped
1 head of broccoli chopped
2 carrots chopped
1 lb green beans
2 Tbsp olive oil
Salt and pepper to taste
1 tsp garlic powder
2 tsp Italian seasoning
BBQ sauce optional
Preheat the oven to 400 degrees. Line a baking sheet with parchment paper or drizzle with olive oil so it doesn't stick.
Drizzle the chicken with 1 Tbsp of olive oil, then in a small bowl, mix the seasonings together and rub onto chicken.
Next in a large bowl, toss the veggies and potatoes with the remaining olive oil and salt and pepper. You can add garlic powder or any other seasonings you like.
Spread the veggies in a single layer on baking sheet. Place the chicken in between the veggies.
Bake in oven for 30 minutes or until chicken is 165 degrees. I like to stir around the veggies half way through and make sure the potatoes are tender.
Remove from oven and let it rest for a minute and then drizzle with bbq sauce if you want.
